Multifunction Pasteurizer
A complete laboratory for pasteurizing custard, confectionery creams and fillings and chocolate tempering.
Fully automatic and controlled by the AUTOFRIGOR micro-processor, the PASTOMAT Patissier is your everyday partner for the preparation of:
- custard, confectionery creams, rice pudding,
- bavarois and fruit mousse bases, ganache,
- sugar syrup, ice cream mix, toppings,
- poached fruits, fruit puree, jam or sauce,
- chocolate cover for moulding with the related option,
- bechamel, sauces, fillings, garnishings.
A true multifunctional laboratory, the PASTOMAT Patissier saves product, time and labour:
- it stirs up, heats up at the selected temperature up to 99° C or, for specific recipes, over 100° C,
- cooks during the fixed time of 1 to 120 minutes,
- blast chills at the set up working or conserving temperature down to +3° C,
- keeps up your preparations at the cooling temperature until during 48h.
Start your program, eventually adjust the 3 parameters value if it is not already registered, that is all. At every moment, you can visually check the production cycle and the product and tank side temperatures. A book of recipes is delivered with the machine.
